Zucchini-Carrot-Banana Whole Wheat Bread

Toddler-friendly bread - I make it on the weekend and freeze it in slices, so we have an instant snack available through the week.

Step: 1

Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.

Step: 2

Mash banana in a large bowl. Whisk in eggs, sugar, honey, oil, and vanilla extract.

Step: 3

Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, and salt in a separate bowl. Stir into the banana mixture until batter is moistened.

Step: 4

Stir zucchini, carrot, and chocolate chips into the batter until evenly distributed. Pour batter into the prepared pan.

Step: 5

Bake in the preheated oven until a knife inserted into the center comes out clean, 50 to 60 minutes.

The quality of the flour can make a real deal to your bread. Different makers do vary. Extra-strong or Canadian flours, which are naturally higher in gluten, may give you a better rise than standard bread flours – especially if you’re making wholemeal bread , which not always getting bigger as well as clear bread.

To made this in a breadmaker , add all the menus to your breadmaker and follow the makers instructions.

A bread first rising can be make in the fridge 24 hours . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great limit , as you can start it yesterday , then clear it off the next day.
