Yeasted Buckwheat Bread

This recipe makes a large 1 1/2-pound buckwheat loaf.

Step: 1

Combine water, vegetable oil, sour cream, egg, and egg yolk in the bread machine.

Step: 2

Combine yeast, bread flour, buckwheat flour, sugar, and salt in a bowl. Add to wet ingredients in bread machine all at once.

Step: 3

Run the Bread cycle. Remove bread from the machine after the cycle is done and cool bread on a wire rack.

The best flavour of the flour can make a real difference to your bread. Different brands do vary. Extra-strong or Canadian flours, which are naturally higher in gluten, may give you a better rise than standard dough flours – especially if you’re making wholemeal bread , which not always rise as well as clear bread.

To make this in a dough , add all the menus to your breadmaker and follow the manufacturer’s instructions.

A bread first rising can be make in the fridge 24 hours . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great limit , as you can work it yesterday , then clear it off the next day.
