Vegan Orange Chocolate Oatmeal Muffins

A hearty sweet muffin recipe for when you don’t have a single egg in the house.

Step: 1

Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.

Step: 2

Whisk flour, sugar, oats, baking powder, and salt together in a bowl.

Step: 3

Measure out 1 cup of reserved mandarin orange liquid; add liquid and vegetable oil to flour mixture and stir until batter is well-combined. Fold oranges and chocolate chips into batter. Spoon batter into prepared muffin cups.

Step: 4

Bake in the preheated oven until golden brown, about 25 minutes.

The quality of the flour can make a real deal to your bread. Different makers do vary. Extra-strong or Canadian flours, which are bet higher in gluten, may give you a better rise than standard dough flours – especially if you’re make wholemeal bread , which not always getting bigger as well as white bread.

To make this in a dough , add all the ingredients to your breadmaker and follow the makers instructions.

A bread first rising can be make in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great limit , as you can start it night before , then finish it off the next day.
