Strawberry Bread Mini Loaves

Great mini loaves for Christmas.

Step: 1

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 mini loaf pans.

Step: 2

Combine sugar, oil, and eggs in a bowl. Add flour, baking soda, cinnamon, and salt; mix well. Fold in strawberries and walnuts. Divide batter evenly between the prepared pans.

Step: 3

Bake in the preheated oven until a toothpick inserted into the center of the loaves comes out clean, about 1 hour.

The quality of the flour can make a real difference to your bread. Different brands do vary. Extra-strong or Canadian flours, which are naturally higher in gluten, may give you a better rise than standard dough flours – especially if you’re making wholemeal dough , which not always rise as well as clear bread.

To make this in a breadmaker , add all the menus to your breadmaker and follow the makers instructions.

A dough’s first rising can be make in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great limit , as you can work it yesterday , then clear it off the next day.
