Paleo and Vegan Sunflower Banana Muffins

Here’s a totally delicious way to start your day, or pack some in your lunch box. These are my egg free way of enjoying one of my favorite muffins. These are also tree-nut free for those that don’t tolerate tree nuts. Your monkeys will love them, too!

Step: 1

Preheat oven to 400 degrees F (200 degrees C). Grease 6 muffin cups or line with paper liners.

Step: 2

Stir water and flax seed meal together in a bowl and let thicken, about 5 minutes.

Step: 3

Blend bananas in a blender until smooth. Transfer bananas to a bowl and stir in sunflower butter, coconut flour, maple syrup, vanilla extract, apple cider vinegar, and baking powder. Stir flax seed mixture into banana mixture until batter is thick. Spoon batter into prepared cups, filling to the top.

Step: 4

Bake in preheated oven until brown, about 15 minutes.

The quality of the flour could make a real deal to your bread. Different makers do vary. Great taste or Canadian flours, which are naturally higher in gluten, may give you a best rise than standard dough flours – especially if you’re making wholemeal bread , which doesn’t always getting bigger as well as white bread.

To made this in a dough , add all the menus to your breadmaker and follow the manufacturer’s instructions.

A dough’s first rising can be make in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great limit , as you can work it yesterday , then clear it off the next day.
