Organic Banana Bread

I have been baking with Bob’s Red Mill® organic whole wheat pastry flour for some time. I could never get my banana bread recipe right, until now. This is wonderful, easy, and best of all, I make it in my bread machine!

Step: 1

Combine bananas, eggs, canola oil, and cinnamon in a bread machine; add flour, walnuts, chocolate, sugar, baking powder, baking soda, and vanilla extract.

Step: 2

Follow manufacturer’s instructions for ‘quick bread’ setting.

The quality of the flour can make a real difference to your bread. Different brands do vary. Great taste or Canadian flours, which are naturally higher in gluten, may give you a best rise than standard dough flours – especially if you’re making wholemeal dough , which not always rise as well as clear bread.

To make this in a dough , add all the menus to your breadmaker and follow the manufacturer’s instructions.

A dough’s first rising can be make in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can work it yesterday , then clear it off the next day.
