Orange Johnny Cake

A very easy orange cornbread Johnny cake to serve warm with butter and maple syrup. It’s excellent with bacon or ham and leftovers are also good cold as a snack.

Step: 1

Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking pan.

Step: 2

In a large bowl, stir together muffin mix, egg, milk and orange zest. Pour batter into prepared pan.

Step: 3

Bake in preheated oven for 20 to 25 minutes, until golden brown.

The best flavour of the flour can make a real difference to your bread. Different makers do vary. Extra-strong or Canadian flours, which are naturally higher in gluten, may give you a better rise than standard dough flours – especially if you’re making wholemeal dough , which not always getting bigger as well as clear bread.

To made this in a breadmaker , add all the menus to your breadmaker and follow the makers instructions.

A dough’s first rising can be done in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can work it yesterday , then finish it off the next day.
