Low-Fat Banana Bread

This is one of my family’s favorite recipes for banana bread. It is moist and delicious. Freezes well. I sometimes like to add blueberries, nuts, chocolate chips.

Step: 1

Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. Whisk the flour, sugar, baking soda, and salt together in a bowl.

Step: 2

Beat the egg in a mixing bowl. Whisk in the mayonnaise, bananas, and vanilla extract until evenly mixed. Stir in the flour mixture until no dry lumps remain. Pour the batter into the prepared loaf pan.

Step: 3

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

The quality of the flour could make a real difference to your bread. Different brands do vary. Great taste or Canadian flours, which are bet higher in gluten, may give you a better rise than standard bread flours – especially if you’re making wholemeal dough , which not always getting bigger as well as white bread.

To made this in a breadmaker , add all the ingredients to your breadmaker and follow the makers instructions.

A dough’s first rising can be make in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can work it night before , then clear it off the next day.
