Low-Carb Coconut Flax Mug Muffins

A perfect, quick, low carb muffin!



Step: 1

Combine egg, flaxseed meal, coconut flakes, coconut oil, coconut beverage, vanilla extract, baking powder, and stevia in a bowl; mix well. Pour batter into a microwave-safe mug.

Step: 2

Cook in a microwave oven on high for 1 minute.


Per Serving: 314 calories; protein 11.8g; carbohydrates 12.5g; fat 25.1g; cholesterol 186mg; sodium 324.8mg.

The quality of the flour could make a real deal to your bread. Different brands do vary. Great taste or Canadian flours, which are naturally higher in gluten, may give you a better rise than standard dough flours – especially if you’re making wholemeal dough , which not always rise as well as clear bread.

To made this in a breadmaker , add all the ingredients to your breadmaker and follow the makers instructions.

A bread first rising can be done in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can work it night before , then clear it off the next day.
