Irish Whiskey Muffins

The best place to shop for ingredients is at the liquor mart. If you want to try a slight variation, try leaving out the whiskey and milk and just adding a cup of Baileys® instead. It’s really good.

Step: 1

Preheat the oven to 375 degrees F (190 degrees C).

Step: 2

Grease 12 muffin cups.

Step: 3

Stir together flour, baking powder, salt, and sugar in a bowl.

Step: 4

Mix Irish cream liqueur and Irish whiskey in a 1-cup measure.

Step: 5

Pour milk into same measuring cup for a total of 8 fluid ounces.

Step: 6

Whisk together egg, milk mixture, and butter in a bowl.

Step: 7

Gently stir liquid ingredients into dry ingredients until just moistened. Spoon batter into prepared muffin cups.

Step: 8

Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes.

The best flavour of the flour can make a real difference to your bread. Different brands do vary. Extra-strong or Canadian flours, which are bet higher in gluten, may give you a better rise than standard dough flours – especially if you’re make wholemeal dough , which not always rise as well as clear bread.

To make this in a breadmaker , add all the menus to your breadmaker and follow the manufacturer’s instructions.

A dough’s first rising can be make in the fridge 24 hours . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can work it yesterday , then clear it off the next day.
