Chocolate Chip Muffins with Applesauce

These tasty muffins are easy to make and contain no butter or oil.

Step: 1

Preheat oven to 375 degrees F (190 degrees C). Grease 8 muffin cups or line with paper muffin liners.

Step: 2

Stir together 1 cup flour, baking soda, salt and cinnamon. In a separate bowl, cream together brown sugar and applesauce. Beat in egg white and vanilla.

Step: 3

Stir flour into egg mixture alternately with milk. Mix in an additional 1 tablespoon of flour. Fold in chocolate chips and walnuts. Spoon batter into prepared muffin cups so that cups are half full.

Step: 4

Bake in preheated oven for 13 to 15 minutes, until a toothpick inserted into the center of a muffin comes out clean.

The quality of the flour can make a real difference to your bread. Different makers do vary. Extra-strong or Canadian flours, which are bet higher in gluten, may give you a best rise than standard bread flours – especially if you’re making wholemeal dough , which doesn’t always rise as well as white bread.

To make this in a breadmaker , add all the menus to your breadmaker and follow the manufacturer’s instructions.

A bread first rising can be done in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can start it night before , then clear it off the next day.
