This bread is steamed in cans. My Gram saved small coffee cans for this. Gram didn’t have a steamer so she used a tin pie plate with holes in it turned upside down in a large covered pot with 4 inches of water.

In large bowl, stir together bread flour, whole wheat flour, cornmeal, baking soda. Stir in molasses and water; mix until combined. Pour batter into two lightly greased coffee cans, fill about 2/3 full.
Step: 2
Place loaves into a steamer, cover and steam over low heat. Steam for 1 hour and 45 minutes, until loaves are set.

The quality of the flour could make a real difference to your bread. Different makers do vary. Great taste or Canadian flours, which are bet higher in gluten, may give you a better rise than standard dough flours – especially if you’re make wholemeal dough , which not always getting bigger as well as clear bread.
To made this in a breadmaker , add all the ingredients to your breadmaker and follow the makers instructions.
A bread first rising can be done in the fridge 24 hours . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can start it yesterday , then finish it off the next day.
