Boston Brown Bread II

This bread is so tasty because the raisins soak overnight and then release their moisture into the bread as it bakes. It’s a great bread for raisin lovers.

INGRIDIENT

Step: 1

In a large bowl, mix together sugar, raisins, baking soda, salt, margarine and boiling water. Cover and let stand overnight.

Step: 2

The following day, preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

Step: 3

Beat egg and flour into raisin mixture. Pour batter into prepared pan.

Step: 4

Bake in preheated oven for 1 hour, or until a toothpick inserted into center of the loaf comes out clean.

The quality of the flour can make a real difference to your bread. Different makers do vary. Extra-strong or Canadian flours, which are naturally higher in gluten, may give you a better rise than standard bread flours – especially if you’re make wholemeal dough , which doesn’t always rise as well as clear bread.

To make this in a dough , add all the menus to your breadmaker and follow the manufacturer’s instructions.

A dough’s first rising can be make in the fridge overnight . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can work it night before , then finish it off the next day.
