This is a delicious and nutritious bread that is very easy to make. I like it so much, I sometimes have it for breakfast!
Step: 1
Grease a 9 x 5 inch loaf pan. Preheat oven to 350 degrees (175 degrees C).

Combine oil, honey, eggs, vanilla, and mashed bananas in a bowl.

In a large bowl, whisk together flour, wheat germ, salt, and baking soda. Make a well in dry ingredients, and add the banana mixture. Mix together until dry ingredients are moistened. Stir in nuts. Pour batter into prepared pan.

Bake 1 hour in preheated oven. Test for doneness, and cool on wire rack.

The quality of the flour can make a real deal to your bread. Different brands do vary. Extra-strong or Canadian flours, which are naturally higher in gluten, may give you a best rise than standard bread flours – especially if you’re making wholemeal bread , which doesn’t always rise as well as white bread.

A dough’s first rising can be done in the fridge 24 hours . This slows down the time it takes to rise to double its size, giving it a deeper flavour. It’s also a great timesaver , as you can start it night before , then clear it off the next day.
